Since 1991, the farm’s two hundred Sarda sheep have grazed the pastures surrounding Podere il Casale, giving life to organic raw milk pecorino and goat cheeses that express the uniqueness and quality of the territory.

These cheeses are made with raw milk that is never pasteurised or sterilised, and that never goes above 40°C during production. This calls for great care and attention throughout the cheesemaking process.

The result is a flavourful cheese with its own identity and plenty of character. Taste and appearance can vary from season to season, depending on the climate and on what the animals eat.
